綠茶紅荳卷
材料
雞蛋 2隻
糖粉 40克
綠茶粉 4克
低筋麵粉 40克
無鹽牛油溶液 10克
罐頭紅荳蓉 60克
熱水 10毫升
魚膠片 (浸軟) 2片
甜忌廉 (打至企身) 100毫升
做法
- 蛋白及砂糖打至企身,加入蛋黃及已過篩的綠茶粉及麵粉,再加入牛油拌勻,倒入焗爐鋪平。置入已預熱至180度焗爐焗約13分鐘。
- 紅荳蓉、熱水和魚膠混台,加入已打至企身的甜忌廉中拌勻,抹在蛋糕上,捲起,雪1小時即可。
TIPS
當綠茶蛋糕焗好後,趁熱軟身,將其捲起固定形狀,待涼再抹上紅豆忌廉,捲起蛋糕就不會易爛。
Green Tea Read Bean Roll Cake
Ingredients
Egg 2pcs
Caster sugar 40g
Green Tea Power 4g
Low-raising flour 40g
Melted unsalted butter 10g
Red bean paste 60g
Boiling water 10ml
gelatin slice (softened) 2pcs
Sweet whipping cream (whisked) 100ml
Steps
- Whisk egg white and sugar until stiff, add egg yolk and fold in sieved green tea powder and flour. Then add melted butter. Stir well. Pour into mould. Bake in preheated oven in 180 for 13mins.
- Mix red paste, boiling water and gelatin, fold in whisked sweet cream, comnine well. Spread the cream on the cake, roll and chill a hour.
TIPS
When the green tea cake is baked, roll it up to fix its shape while it is still hot and soft. When it cools, spread the red bean cream on it. The rolled cake will not rot easily.
